Paleo – Day 10

Double digits!  Finally we have hit the double digits.  Today I spent the afternoon in the kitchen whipping up a few Paleo recipes and I even broke out the iPhone and took some pictures, just to assure you that we are eating “real good” and the food tastes even yummier than it looks.

quicheFirst, I cooked a quiche from a recipe one of my friends and Paleo coaches passed on.  Thank you Keisha!  I took a bite and it tastes pretty yummy, it has bacon and broccoli along with the quiche base (with almond flour and almond milk).  I have high hopes that it will make my tummy happy in the morning as well.  I will let you know.



muffinsNext, I moved on to one of my favorite muffins.  This is the muffin that had me chasing coconut flour all over town and it was well worth the work!   This lemon poppy seed muffin has a great lemon taste, and after having just one mini muffin it did not make me frantically craving sugar, although they were good enough that I did go back for more…even better that I could go back without the guilt.


hawaiian chickenTo finish off the afternoon, I made my own version of Paleo Hawaiian chicken.  This is chicken tenders seasoned with a Citrus Pepper mix (great seasoning from Sprouts), and covered in pineapple and peppers.  Its smelling awesome, and looks to not disappoint.  Again, I will let you know.


Last night we did dine at Serranos and fully enjoyed our Paleo friendly fajita combination (chicken and beef) platter.  My hubby is always willing to go out when I am not in the mood for cooking.  He did not need any convincing.  He is the best hubby EVER!
