Paleo – Day 4

Today I tried another Paleo friendly dessert – chocolate macaroons.  And again I have to say that they are really good.  Having been in culinary school for pastry arts, I have found it very interesting to see how gluten-free, diary-free, and refined sugar-free desserts are put together.  The best part of the dessert is to have the sweet tooth satisfied, but the real interesting observation is that the desserts taste so good because you can really taste and enjoy the ingredients of the dessert.  The coconut and cocoa in the macaroons was full flavored, rather than just the taste of sugar, sugar, sugar that I find in so many other desserts.  I am excited to try more recipes. 

Tonight I also grilled salmon and asparagus and peppers on the George Foreman grill and it was another really good dinner that we both enjoyed.

One other note, I have tons of leftovers.  We have been eating the previous night’s dinner for lunch the next day, but between lunch appointments and an overabundance of leftovers, we have plenty.  So today I pulled out a big plastic container and dumped a bunch of different leftovers together and froze them.  I am hoping they turn into a good hearty stew for another week…hopefully a week that the highs are not in the nineties!
