Paleo – Day 2

Reality.  Today I had to look in the mirror and admit that I had to be honest with myself.   I am really discouraged that I cannot go 100% Paleo.  So due to some additional physical factors not worthy of mention, I am stepping forward and declaring that I am adjusting my diet again.  I have been driving myself crazy weighing my options, but at this current time in my life with the current demands and in my current state of health, I am deciding to continue eating mostly Paleo.  I will be eating 100% Paleo dinner and staying with my Paleo recipe experiments.  I will be eating mostly Paleo the rest of the day.  I will keep my “3 no cheats” (french fries, donuts, ice cream).  I will not be eating added refined sugars or salts.  I will be eating a limited amount of grains and dairy. 

Oddly enough, I have found making this decision to be very strengthening.  I am not completely sure why, other than I know my decision may not be popular, but I am doing what I think is best for me and what I want to do.  I will still have a 100% Paleo experiment, but it is not for this time.

 Eric is continuing on his 100% Paleo journey.  I support him 100% and will do everything I can to encourage him and keep him on track (meaning, I will still cook it all  😉  ).  I will also continue to daily update what I am cooking Paleo and any notes about how I am doing in my own journey.

Dinner – Pot Roast with fire roasted canned tomatoes, carrots, cauliflower, green beans, leeks

I have to make pot roast more often.  Sooo easy, sooo yummy.
