Creations by EG

My dear hubby is an engineer.  He likes structure and routine and does not feel that he is the creative type.  But we have found one area in which he likes to be creative, and it is not one you would expect.  He has never really been much of a chef.  I do most of the cooking because I truly enjoy it, so I was truly shocked to find that he enjoys creating in the kitchen.  A few years ago when I was on a trip for work, Eric found himself looking through the fridge and piecing together some things for a meal.  Thus began his first creation…the Italian Chicken Taco.  That’s right, a chicken breast, spaghetti sauce, cheese and tortilla heated in the microwave.  And I think that is what he ate every night I was away, and then continued to eat when I returned.

The funny thing is, that sounds terrible to me, but Eric, the pickiest grown up I know, loves his creations.  Lately, his creations have been melts.  One of the things Eric hates is butter, so all of his melts are done sans butter.  Tonight, he enjoyed his latest creation, the Turkey Pizza Melt, that’s right, turkey, shredded mozzarella, and pizza sauce grilled on wheat bread.  And as much as his creations do not appeal to my appetite, I am proud that he has found his creative side.  Please feel free to come by anytime if you would like to enjoy a Creation by EG.
